In the heart of Gijverinkhove, where village life has come together for centuries, stands a building that is more than stone and wood.
The house that now hosts De drie ridders carries a long history. A history of meeting, hospitality, and community. As early as the 18th century, this house played a central role in village life. Over time, it served as the town hall, an inn, and later a traditional local pub. It was a place where decisions were made, stories were told, and glasses were raised. Generations of villagers gathered here, each with their own rhythm, always around the same table.
When Emily Bauden and Bart van Renterghem discovered the building, they immediately recognised the soul of the house. Not as something tied to the past, but as a foundation to build upon. In 2021 entered the house a new chapter with respect for what was, and care for what is yet to come.
The name De drie ridders refers not only to strength and tradition, but also to the values that define this place: craftsmanship, hospitality, and connection.
Just as knights once watched over their domain, Emily and Bart now watch over their kitchen and their guests with care, dedication, and a strong sense of authenticity.
What reaches the table today is refined and contemporary, yet always rooted in the region and the seasons. In this way, history lives on. Not as a memory, but as an experience.
